Welsh Cakes


  • 8 ounces self-raising flour
  • 3 ounces salted butter
  • 1 ounce margarine
  • 1 egg
  • Sultanas (as required)
  • Milk (if needed)
  • 4 ounces sugar
  • Butter for greasing


Rub butter, margarine and flour together until they look like breadcrumbs. Add sugar, sultanas and egg and mix to a pastry. If too dry, add a little milk.

Roll out the pastry and cut into round shapes.

Then heat a bake-stone (or griddle) and rub with butter.

Place the welsh cakes on there to bake, turning once. Each side should be light brown when cooked — takes about three minutes, depending on the heat of the bake-stone.
