Sweet Potato Biscuits


  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • ½ cup butter (frozen)
  • 1 cup mashed sweet potatoes (cold)
  • 1¼ cups buttermilk


Preheat oven to 450° F. In a medium bowl, whisk together flour, salt and baking powder. Using the large holes of a box grater, grate butter into flour mixture. Toss gently with a fork until butter is coated with flour. Chill 10 minutes.

In separate large bowl, combine sweet potatoes and buttermilk. Gently fold potato mixture into flour mixture until just combined. Scoop biscuit dough into mounds onto parchment-lined baking sheet 1 inch apart, about 1½ tablespoons each. Bake 20 minutes or until beginning to brown on top.
