Roasted Halibut with Orange Salsa


  • Orange Salsa
    • 1 small red onion
    • ¼ cup fresh lemon juice
    • 2 navel oranges
    • 2 pickled jalapeno peppers
    • ½ cup fresh cilantro
  • Roasted Halibut
    • 4 (6-8 ounce) pieces halibut fillet
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • Olive oil or nonstick spray


Orange Salsa

Toss onion with lemon juice in a medium bowl. Let stand at least 30 minutes, then stir in remaining ingredients.

Roasted Halibut

Heat oven to 500° F.

Line a rimmed baking sheet with foil (for easy cleanup). Place fish on sheet; season with salt and pepper. Coat tops with nonstick cooking spray.

Roast 10 minutes or until cooked through.

Serve with Orange Salsa.
