Pumpkin Spice Bread


  • 3 cups flour
  • 3 cups sugar
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons baking soda
  • 1½ teaspoons salt
  • 4 eggs
  • 1 (15 ounce) can pumpkin
  • 1 cup vegetable oil
  • ½ cup orange juice
  • 1 teaspoon vanilla extract
  • 1 cup pecans (chopped, divided)


Grease and flour two 9x5 inch loaf pans. Mix flour, sugar, pumpkin spice, baking soda and salt in a large bowl. Set aside.

Beat eggs in a medium bowl. Stir in pumpkin, oil, orange juice and vanilla. Add to flour mixture; stir just until moistened. Stir in ½ cup of the pecans. Divide batter evenly between prepared pans. Sprinkle top of each loaf with ¼ cup of the pecans.

Bake in a preheated 350° F oven 55-60 minutes or until a toothpick inserted into the center comes out clean. Cool in pans 10 minutes. Remove from the pans. Cool completely on a wire rack.
