Honey Nut Cake

Ingredients:

  • 1½ cups cottage cheese
  • 1½ tablespoons sifted flour
  • ¼ teaspoon salt
  • 3 tablespoons sour cream
  • 3 egg yolks (slightly beaten)
  • ¾ cup honey
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • Grated rind of 1 lemon
  • ½ cup wheat germ
  • 3 egg whites (stiffly beaten)

Directions

Put cheese through a strainer to break up the curds.

Combine cheese with next nine ingredients. Mix well. Fold in beaten egg whites.

Butter a 9 inch square cake pan; sprinkle the bottom with more wheat germ. Pour batter into pan and top with 1/8 cup wheat germ and ½ cup chopped nuts.

Bake at 375° F for 30 minutes.
