Ginger Dumpling Soup


  • 6 cups chicken broth
  • ½ small red chili (thinly sliced)
  • 1 (1 inch) piece ginger (thinly sliced)
  • ½ head small napa cabbage (cut into bite-size pieces)
  • 12 ounces frozen vegetable potstickers
  • 1 cup snow peas (halved)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • Scallions (sliced)


Place chicken broth, red chili, and ginger in a large pot and bring to a boil.

Add cabbage and potstickers, return to a boil, then reduce heat and simmer for 4 minutes. Add snow peas and simmer until the vegetables are tender and the potstickers are cooked through, 2-3 minutes more.

Stir in soy sauce and rice vinegar. Sprinkle with sliced scallions, if desired.
